
HEAT oil in large skillet. Add chicken and cook until browned. Remove chicken.
ADD onion and garlic and cook until tender. Add tomatoes and cook 2 min. Add rice, saffron, pepper, broth, water and chicken. Heat to a boil. Cover and cook over low heat 25 min. or until done.
STIR in spinach. Let stand 5 min.

08/21/09 09:05 PM | Chicken Jollof Recipe with shortcutsI made this for dinner tonight and it was delicious! Having worked all day, I wasn't at all interested in doing the full prep, so I took as many shortcuts as I could. First, I bought a 3 1/2 lbs. chicken already cut up and instead of buying the tomatoes, I just bought a can of roasted diced tomatoes. I didn't have any red pepper flakes, but several dashes of Tabasco sauce did the trick. Instead of frying the chicken pieces in oil, I sprinkled each piece with rotisserie chicken seasoning, stuck them in an oven bag and baked at 350 for 45 minutes. Instead of plain rice, I just used a package of the Mahatma Saffron rice and omited the turmeric. Much quicker prep time and a delicious, satisfying meal! |
