METHOD:
Preheat the grill. In a bowl, combine the barbecue sauce with 1 1/2 cups chopped chipotle peppers, a pinch of salt and pepper, and 1 teaspoon of the adobo sauce from the can of peppers. Season the pork with the juniper berries, salt and pepper, cumin, chili powder and granulated garlic. Then coat with the seasoned barbecue sauce. Grill the pork 6 minutes per side, flipping every 3 minutes.
Heat the oil in skillet over medium-high heat. Add the garlic and cook 1 minute. Add the arugula and cook 1 minute, stirring constantly with tongs. Add salt to taste.
Round Out the Meal:
With mashed new potatoes.
Kid Friendly:
Omit the chipotle peppers and the chili powder.
