pre-heat oven 325-350
mix together cream cheese sugar and eggs beating after each eggtthat is added until creamy and blended
Meanwhile heat water to boiling for a water bath
add vanilla lemon juice and both lemon rind and the orange peel to the batter stirring until blended
grease non-aluminium pan [9 in cake pan] with butter and shake graham cracker crumbles over same ,just as if you were dusting a pan with flour.
add batter to the pan.
place cake pan in a larger pan,fill with boiling water to a water bath.and place in the oven
leave cake in oven undisturbed for 11/2 hours. top should be golgen brown with a few cracks on top, then contiue to leave iit in the oven with the door opened for another 30mins.
When cake is finsh baking,set on cakerack to cool before you take it out and place on a plate.
my favorite cheese cake. It's a very heavy cake.
