12/07/08 03:28 PM | PREVENT THE JIGGLIESThis is essentially Abbey's Famous Pecan Pie recipe, and it's a great pie. To prevent the pie from staying too soft in the center, it has been recommended that you just add a teaspoon of Corn Starch to the mix. Seems to help firm it up a tad. |

11/12/08 09:10 PM | If you want TRUEKy Derby Pie...that is what we call Pecan Pie in KyGGcdm2..... Got it half right. But add 1 cup of semi-sweet chocolate chips in the mix when you stir it all together. Yes, it will be a little "jiggly" when you take it out of the oven, but when it cools it will get more solid. And wait and drizzle the bourbon over the top right as you take it out of the oven. What kind of bourbon dosen't make any difference, only the good bourbon is made in Ky. The pie will still be hot enough to evaporate the alchol and leave the flavor!!!!! |
