
Set up grill for direct cooking over medium heat (see page ??). Oil grate when ready to start cooking. For Key Lime Sauce in a small saucepan melt butter over medium heat. Stir in lime juice chili sauce and the 2 teaspoons All-Purpose Poultry Sprinkle. Cook 1 minute. Remove from heat; set aside.
Season with the 1 tablespoon All-Purpose Poultry Sprinkle. Place chicken on hot oiled grill and cook for 18 to 22 minutes per side or until chicken is no longer pink and juices run clear (180 degrees F) basting with Key Lime Sauce every few minutes until last 2 minutes of cooking. Discard any remaining sauce. Makes 4 servings
INDOOR METHOD: Preheat broiler. Prepare chicken and Key Lime Sauce as directed. Place chicken on foil-lined baking sheet or broiler pan. Broil chicken 6 to 8 inches from heat source about 15 to 20 minutes per side or until chicken is no longer pink and juices run clear (180 degrees F) basting with Key Lime Sauce every few minutes until last 2 minutes of cooking. Discard any remaining key lime sauce.
All-Purpose Poultry Sprinkle You will need: Airtight container 2 tablespoons garlic salt 2 tablespoons citrus-herb seasoning 2 teaspoons poultry seasoning 1/8 teaspoon cayenne pepper In an airtight container combine garlic salt citrus-herb seasoning poultry seasoning and cayenne pepper. Cover and store for up to 4 months. Makes 1/4 cup
