Ingredients

  • 1/2 cup sugar
  • 1 pinch Salt
  • 1/2 cup Key lime juice
  • 2 T Grated lime rind (no pith)
  • 1 8 oz pkg Cream cheese, softened at room temperature
  • 1 10 oz can Evaporated milk
  • 2 T Butter, unsalted
  • 1 pkg Mother's Coconut Cookies
  • 1 can Whipping cream or carton of frozen whipped product

Cooking Instructions

In a food processor, mix coolkies and butter until crumbled finely and well incorporated. Using the large bowl of your electric mixer, cream the cheese until soft. Scrape the sides while mixing throughout this process. Add the condensed milk, lime juice and rind, salt and sugar and continue to mix turning the speed up to med high to whip air into the ingredients. Whip for about 3 minutes. Pour into pie dish or pan and refrigerate for 3 or more hours before serving topped with whipped topping of your choice.

If lemon is used intead you will please those who love a really rich and wonderful lemon dessert.

Cookie Crust?

Are we to assume that the coconut cookies and butter are to line a pie pan or dish with and make a crust for the pie?

Easy Key Lime Pie

I think that it must call for condensed milk rather than evaported. Will not set up with evaporated!
