In a food processor, mix coolkies and butter until crumbled finely and well incorporated. Using the large bowl of your electric mixer, cream the cheese until soft. Scrape the sides while mixing throughout this process. Add the condensed milk, lime juice and rind, salt and sugar and continue to mix turning the speed up to med high to whip air into the ingredients. Whip for about 3 minutes. Pour into pie dish or pan and refrigerate for 3 or more hours before serving topped with whipped topping of your choice.
If lemon is used intead you will please those who love a really rich and wonderful lemon dessert.
