Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

sounds easy enoughI would suggest telling people how to cut, trim the greems before cooking them, dont assume people know what to do in the kitchen. |

collardsYes theia is right. The greens must be cleaned properly (dirt, bugs, worms) wrinse them in a sink bath of water--nothing worse than gritty greens. And the thick stems have to be broken off also. Some groceries also sell greens in a bag aready cleaned and trimmed. I think Glory ( the same company that makes canned soul food products) makes the bagged greens. |

not real southerni'm a southern boy, and I love collard greens in multiple ways. This recipe was absolutely horrible. |
