Cooking Instructions

Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.

Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

lighten up people!

I've tried collard greens made with ham hocks or bacon fat or both, but this lighter version taste just as good as the original way!!! very tasty!

Nope won't work

Sorry. You want greens that taste good you have to wilt them first in hot water; rinse them in cold water and then proceed with the recipe. This process takes out the bitter. That's how its done in rural Georgia.

Just my style!

Loved the recipe. One more way to prepare a favorite vegetable. I loved the spicy flavor.
