Kickoff Salsa-Cheese Dip

Ingredients

  • 1 jar (12 to 16 oz) fire-roasted salsa verde (tomatillo salsa)
  • 3 cups (12 oz) Mexican-style finely shredded cheese blend (Cheddar, asadero, queso quesadilla and Monterey Jack cheeses)
  • 1/4 cup chopped fresh cilantro
  • 1 firm-ripe avocado, peeled and cubed
  • 1/4 cup sliced pickled jalapeño peppers
  • 1/4 cup sliced canned black olives
  • 2 scallions, chopped

Cooking Instructions

Coat a microwave-safe 1-qt shallow baking dish or pie plate with nonstick spray (see Note).

Spoon salsa over bottom of dish; top with cheese.

Microwave on medium (#5) 5 to 7 minutes until bubbly around sides and cheese has melted. Top with remaining ingredients. Serve immediately with chips for dipping.
