Ingredients

  • 1 tbsp salt
  • 2 tsp coarsely ground black pepper
  • 2 tbsp minced garlic
  • 1 tsp sugar
  • 1/2 tsp ground cumin
  • 1 tsp dried marjoram
  • 1/2 tsp dried thyme
  • 2 tsp dry mustard, preferably Colman's
  • 1/4 cup water
  • 2 cups chopped raw potato soaked in lemon water (optional)
  • 1/2 lb fat trimmed from butt and/or pork back fat
  • 1-1/2 lbs lean pork butt
  • 1 lb lean beef, preferably chuck

Cooking Instructions

Process the meat and fat and combine with the other ingredients as described in the Master Recipe Sage and Pepper Pork Sausage (page 412). For a lower fat content, drain and add the optional potatoes when you grind the meat. Fry and taste a patty, then adjust the seasonings if necessary.
