Ingredients

  • 5 medium red-skinned potatoes, thinly sliced
  • 1 Tbsp oil
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 lb reduced-fat fully cooked turkey kielbasa, cut in quarters, slashed in several places
  • 1 red apple
  • 2 scallions
  • 1 bag (16 oz) coleslaw mix
  • 1/2 cup light mayonnaise
  • 1/2 cup dried cranberries
  • 1 Tbsp cider vinegar

Cooking Instructions

Heat broiler. Line a large rimmed baking sheet with foil.

Toss potatoes with oil, 1⁄2 tsp salt and 1⁄4 tsp pepper; scatter over entire baking sheet. Broil 10 minutes or until lightly browned and soft. Top with kielbasa; broil 4 to 5 minutes until hot.

Meanwhile cut apple in 1⁄2-in. chunks and thinly slice scallions. Combine in a large bowl with rest of ingredients and remaining 1⁄4 tsp each salt and pepper.
