Pre-Heat oven to 375 degrees F
In a pot add water and boil pasta per instruction on the box.
In a pot pour 2 cans of tomato sauce and add veggie ground round. Let it simmer for 5 minutes
Combine three cheeses in a bowl add 3rd of the chopped parsley. Add Salt and Pepper to taste and add egg. Blend it all well.
Spray non-stick cooking oil on rectangular baking dish.
Drain water once pasta is done cooking (Careful not to overcook) and pour cold water on it (This avoids overcooking too).
In the pan pour 4th of the prepared sauce. Lay 1st layer of noodle. Put 1/2 of the cheese mixture on top of noodle and spread evenly. Add another 1/4th of sauce.
Add another layer of noodle. Put 1/2 of the cheese mixture on top of noodle and spread evenly. Add another 1/4th of sauce.
Add another layer of noodle. Put 1/2 of the cheese mixture on top of noodle and spread evenly. Add another 1/4th of sauce.
Add another layer of noodle. Add rest of sauce. Sprinkle your choice of shredded mozzarella or parmesan.
Cover the square pan with aluminum foil and bake @ 375 degrees F for 30 minutes.
Remove aluminum foil and bake for 10 minutes longer.
Once done baking let it stand to firm for 10-20 minutes.
We made this on the B'Day (1 year old) celebration for our daughter Udipti and my husband who happens to be the engineer of this site too :-) invited few of his work friends. It was a blast, as people could not believe this is NON-MEAT :-).
