  • 4 extra large eggs
  • 6 ounces chopped spinached
  • 1/2 teaspoon extra virgin olive oil
  • 1 recipe ragu bolognese
  • 8 ounces parmigiano reggiano
  • 1 recipe bechamel sauce

Cooking Instructions

mound 31/2 cup of flour in the center of a wooden cuttig board make a well in the middle of the flour and add the eggs spinch and the oil using a fork beat togethor the spinach eggs and the oil and begin to corport the flour starting with the inner rim of the well as you exoand the well keep pushing the flour up from the base of the mound to ketain the well the well shape the dough will come togethor when half of the flour is corporaten.
