Lazy-Day Blackberry Cobbler

Ingredients

  • 1/4 cup oil
  • 3/4 cup sucanat
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 3/4 cup soymilk
  • 2 cups blackberries
  • 1/2 cup walnuts

Cooking Instructions

1. Place the oil in the bottom of a 7-x-11-inch baking dish.

2. In a mixing bowl, combine the sucanat, flour, and baking powder. Mix well. Add the soymilk and beat until smooth. Pour this batter over the oil in the baking dish, but do not stir.

3. Arrange the blackberries over the batter and sprinkle with the nuts. Bake at 350F for 30 minutes.

Very east to make, I subustitued regular milk and sugar for soy and sucanat.
