To prepare the oxtail..clean with lime the rinse with hot water..season with 1 spoon of salt, 11/2 spoon of black pepper, 11/2 paprika, 1 half of the tyme, 1/2 tsp of oregano and 1spoon of parsley. Squeeze some lime juice over it. Let it seat for about so the season can get deep down in it..Whiles that's sitting clean the crab and counch both with some lemon juice and put aside. Prepare your veggies: cabbage cleaned and chopped in several halfs, carrots peeled and chopped and millietoun peed and sliced in several slices ready to be steamed. Peel papaya take out the seeds and slice in several pieces to be steamed. (you can a pressure cooker for the oxtail but to keep the favor in the oxtail I suggest that you cook it in a non stick pot with the lid on). In a hot pot add some of the olive oil, 3 of the garlic smashed and 1 chopped shallot. as they begin to cook(not burn) add the oxtail. Stir together then turn down the heat and allow the meat to cook. When you hear a lil sizzling stir the meat and add water just to cover the meat. Allow to continue to cook. When you fork is able to go through the meat put another pot(but a tall one) on. Add a lil olive oil, and 1 smashed garlic. When the garlic is sizzling add some water to the pot not much lets say about 1/2 of a cup. Then you would put in the crabs, the millietoun, the cabbage and papaya. Allow the veggies to cook down to where it is soft soft soft. When the veggies are soft add the carrots and sliced counch to the oxtail stir and turn down the heat. The whole time the top of the pot should be on. Once the veggies are soft soft(BE CAREFUL VERY HOT) You can either blend them, chop them in a chopper or smash them in a bowl. The cabbage has retain water so be careful if your going to smash it in a bowl. Once all the veggies are ready add them little by little stirring it in the oxtail pot with all the other goodies. Taste if it's not to your liking then the remanding of Ingredients to your liking. A
