Bring a large pot of water to a boil. When the water is boiling add 2 large pinches of salt to the water and then your pasta. Cook the pasta until al dente (approx 8-10 minutes)
Thinly slice the cloves of garlic and set aside. Tear the pieces of prosciutto into small pieces.
Place a medium size pan on the stove and add 2 table spoons of Olive Oil. Heat until the oil starts to shimmer.
Add the garlic and the prosciutto. Be careful not to burn the garlic, turn down the heat if necessary. Add the peas (frozen are preferred)
Drain the pasta and add to the pan. Zest the Lemon and add to the pan. Slice Lemon in half, squeeze in the juice and the remaining olive oil.
Toss pasta in the pan and place into serving bowls. Top with grated cheese and enjoy

08/29/07 12:07 PM | Quick and DeliciousI made this the other night and just had to share it. The flavor of the pasta is fresh with the addition of the lemon zest and juice. It provides a great balance to the salt of the prosciutto and the garlic flavor. Just be careful not to burn the garlic. |
