Lemon-Pepper Dressing

Ingredients

  • 1 teaspoon whole pink peppercorns
  • 1 teaspoon whole green peppercorns
  • 1 cup olive oil, preferably extra-virgin
  • 1/2 teaspoon freshly grated lemon peel
  • 1/3 cup fresh lemon juice
  • 2 tablespoons white rice vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon sugar

Cooking Instructions

Lightly crush peppercorns with a mortar and pestle, or place peppercorns in a plastic sandwich bag, seal and pound with a hammer until lightly crushed.

Pour crushed peppercorns into a medium bowl, add remaining ingredients and whisk until blended. Pour into a jar.
