Ingredients

  • 2 tbsp fresh lemon juice
  • 1 tsp fresh lemon peel grated
  • 1 tsp extra virgin olive oil
  • 1 medium garlic clove minced
  • 1/4 tsp salt
  • 15 oz beans lentils canned rinsed and drained
  • 1 fresh tomato seeded and chopped
  • 1/4 cup fresh chopped red onion
  • 3 tbsp chopped parsley
  • 2 oz goat cheese crumbled
  • 3 cup fresh chopped arugula cleaned

Cooking Instructions

1. Whisk together lemon juice and zest oil garlic and salt.

2. Combine the lentils tomato onion parsley and goat cheese. Add arugula to a large bowl and top with lentil mixture.

3. Drizzle dressing over top and toss.
