1. Wash and pick over the lentils. Place them in a medium pot with the water. Cover and bring the water to a boil. Reduce the heat and simmer, stirring occasionally, until the water is absorbed and the lentils are tender but not too soft, about 40 - 45 minutes.
2. Drain the cooked lentils and rinse them briefly under cool water. Drain again, then place them in a medium bowl. Add the remaining ingredients and mix well. Chill for at least 1 hour before serving.
3. Serve on a bed of fresh greens accompanied by some whole grain bread. This salad makes a nice light lunch.
