Lew's Low Carb Banana Bread

Ingredients

  • 1 1/2 cup all purpose flour
  • 1 cup Splendah for baking
  • 1/4 t salt
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 cup no sugar added apple sauce
  • 4 ripe bananas
  • 3/4 t vanilla extract
  • 2 eggs
  • 1/4 cup chopped nuts (if desired)

Cooking Instructions

1. Whisk together the dry ingrediants in a large mixing bowl and set aside.

2. In a medium size mixing bowl mash the ripe bananas with a fork. Blend in the apple sauce eggs and vanilla.

3. Add the banana mixture to the dry ingrediants and mix until just combined.

4. Pour mixture into a greased 9X5 loaf pan. (You can use a canola non stick spray instead of grease.)

5. Bake at 350F for 45 minutes OR until a toothpick inserted into the middle comes out clean.

6. Cool for 10 minutes in the pan and then cool for another 10 minutes on a wire rack.

Recipe Notes

I one snack size no sugar added apple sauce cup that is sweetened with Splendah. Any extras (doubtful) can be wrapped in aluminum foil and frozen. This recipe is also great for the lactose intolerant.
