Lime-Jalapeno Chicken

Ingredients

  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons canola oil
  • 1 tablespoon white vinegar
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 jalapeno, sliced
  • 1-1 1 pounds boneless, skinless chicken breasts, trimmed of fat, tenders removed

Cooking Instructions

1. Whisk lime juice, oil, vinegar, cumin and salt in a small bowl. Stir in jalapeno. Place chicken in a shallow baking dish and pour the marinade over it, turning to coat both sides. Cover and refrigerate for at least 1 hour, turning once, or overnight.

2. Preheat grill to high heat. Oil the grill rack (see Tip). Grill the chicken until cooked through and no longer pink in the middle, 3 to 4 minutes per side. Let cool slightly; thinly slice crosswise. Serve warm or chilled.

To oil a grill: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.) When grilling delicate foods like tofu and fish, it is helpful to spray the food with cooking spray.

Enhance this dish!!

I made this recipe. It is basically good, but I did some enhancement. I prepared it with 4 boneless skinless chicken breasts. Instead of the vinegar, I used a tablespoon of tequila. Remember to chop and de-seed the jalapeno. To finish the dish, I served lime wedges on the side along with creme fresh (Mexican sour cream) with a tsp. of lime zest in it and some fresh chopped cilantro. It adds lots of color and flavor and freshness.

THIS RECIPE'S LOOSE ENDS

How much chicken is needed? I have no clue what "1-1 1 pounds boneless, skinless chicken breast" mean? How much is "1-1 1?" Also, just below the title, it says this recipe serves "0." If it serves zero, why would I want to make it? I wonder if "EatingWell" has an editor. All this said, the flavor combo sounds terrific; it's just the recipe needs better presentation. JMHO.

1 jalapeno?

1 jalapeno.......do you dice it, slice it, throw it in whole? Somebody really didn't proof read this recipe before it was posted.

Ok,this is what I THINK!

I have no idea what that first reviewer was on but she needs to get off of it! The second one hit the mark-this is a very light, refreshing recipe. It's great for summer meals,etc. Minus the dementia inducing margarita's of course!!
