Linguine with Zucchini-Clam Sauce

Ingredients

  • 12 ounces linguine
  • SAUCE
  • 1/4 cup olive oil
  • 2 medium zucchini (12 ounces), halved lengthwise, then thinly sliced crosswise (31/2 cups)
  • 11/2 teaspoons minced garlic
  • 61/2 ounces each) minced clams, undrained
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • Garnish: chopped parsley

Cooking Instructions

Cook pasta according to package directions.

Meanwhile heat 1 tablespoon of the oil in a large skillet. Add zucchini and sauté 5 minutes until lightly browned.

Stir in remaining Sauce ingredients (including clam liquid) and bring to a boil. Reduce heat and simmer, uncovered, 3 minutes to develop flavors.

Drain pasta, transfer to a large serving bowl, add sauce and parsley and toss to mix and coat.
