Low Fat Spinach Mannicotti

Ingredients

  • 16 oz Low fat or fat free ricotta cheese
  • 1 10 oz bag Frozen Spinach
  • 1 Jar Fave spagetti sauce
  • 1 Box Manicotti shells
  • 1 bag Low fat Mozzarella cheese
  • 2 Tbs Parmesan cheese

Cooking Instructions

Very simple & fast recipe.While putting the other ingredients together,boil manicotti noodles to desired tenderness. Mix together the ricotta cheese with one egg & desired spices Once blended with egg, add 1/2-3/4 cup of the mozzarella cheese and parmeson. Allow spinach to defrost if using frozen & sqeeze liquid out. Add to cheese mixture. Allow noodles to cool ,then add the cheese/spinach mixture in shells. Add tomato sauce to bottom of baking dish,add stuffed manicotti shells,top with more sauce & set in 350 degree oven for 30 minutes. The last few minutes,top with more mozzarella cheese. Bake until melted.

Recipe Notes

Fat free ricotta works great. Fat free mozzarella cheeses may be used ,but doesn't melt well on top.
