Use any kind of soup pot or deep skillet with a lid and cover the bottom with sliced onions. 1-2 as much as you like.
Next add a can of diced tomatoes on top of the onions.
Add your new potatoes as many as you like on top of the onions. I usually use 7-8 if they are small. But add at least enough to at least cover the tomatoes and onions.
Add as much minced garlic as you like on top of the potatoes.
Sprinkle salt pepper parsley and basil (fresh if you wish) on top of the potatoes.
Now add some water about a cup enough to cover the top of the potatoes.
Add 3 tablespoons of Olive Oil.
Cover and bring all of the ingredients to a boil.
Then simmer for 15-20 minutes.
Next add your mild fish on top to cover the potatoes and all ingredients.
Keep a little warm water on the side to add as needed to keep potatoes almost covered with water.
Keep pot covered at all times with lid from beginning to end.
Cook until fish is cooked about 20 minutes or until fish flakes off with fork and is cooked throughout.
This is a recipe my mom gave to me. It is a maltese fish stew. She comes from Malta (a small group of islands in the meditteranean just underneath Sicily) and I have typed the ingredients out in Maltese. Makes a nice buttery smell not fishy smelling.
