Marinated Swordfish Steaks

Ingredients

  • 2 1-1/2-pound swordfish or halibut steaks
  • 1/3 cup salad oil
  • 1/3 cup tarragon or cider vinegar
  • 2 bay leaves
  • 2 tbsp chopped parsley
  • 2 tsp salt
  • 1 tsp Worcestershire
  • 1/4 tsp tarragon or 3/4 tsp chopped fresh tarragon
  • 1/4 tsp pepper
  • 1 lime

Cooking Instructions

1. Place the swordfish or halibut steaks in a large shallow dish.

2. In a measuring cup, combine oil, vinegar, bay leaves, parsley, salt, Worcestershire, tarragon and pepper for marinade; pour over fish. Cover the dish and refrigerate, turning the fish occasionally to coat in marinade.

3. About 25 minutes before serving: Preheat broiler if manufacturer directs.

4. Place fish steaks in broiling pan reserving marinade, and broil 15 minutes or until the fish flakes easily when tested with a fork. Baste swordfish or halibut steaks occasionally with marinade.

5. Meanwhile, cut lime into 6 wedges. With a pancake turner, carefully lift swordfish or halibut steaks to warm platter. Serve with lime.
