Warm some corn tortillas in microwave (just enough to make them pliable). Mix potatoes with onion/tomato mixture and salt/pepper to taste. Spoon potato mixture into a tortilla, then fry in canola oil. (Not ddep fry, just enough tocrisp tortilla) |

05/24/08 11:55 AM | Nice tacos, but nothing uniqueThis recipe is very easy to make - its basically just adding potatoes to the standard browning of beef before adding the taco seasoning. As for the flavor, my wife and I both commented that it was very VERY hard to taste any real difference in flavor. Once you add some salsa, cheese, and sour cream, you might as well not waste the extra carbs on the potatoes. There was nothing "bad" about this - it tasted fine - but the potatoes just added nothing special. |
