Mashed Sweet Potatoes with Coconut Milk

Ingredients

  • 1 1/2 pounds sweet potatoes (about 3 medium)
  • 3/4 cup “lite” coconut milk
  • 1 tablespoon minced fresh ginger
  • 1/2 teaspoon salt

Cooking Instructions

1. Prick sweet potatoes with a fork in several places. Microwave on High until tender all the way to the center, 10 to 15 minutes. (Alternatively, place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.)

2. When cool enough to handle, peel off and discard skin. Transfer the sweet potatoes to a medium microwaveable bowl and mash thoroughly with a potato masher. Add coconut milk, ginger and salt; stir well. Reheat in the microwave for 1 to 2 minutes, or in the oven for 8 to 10 minutes. Serve warm.

FANTASTIC INVENTION!

i HAVE BUT ONE COMPLAINT, AND IT'S NOT WITH THE INVENTOR OF THE RECIPE. THE WORD "LITE" IN QUOTES IS PERFECTLY NORMAL. IT MEANS LESS OF SOMETHING THAT IS HARMFUL i.e. (fat). MOST OF YOU HAVE CERTAINLY HEARD OF "LITE" BEER HAVEN'T YOU? MOST GROCERY STORES CARRY BOTH "LITE" COCONUT MILK AND STANDARD.

Answer to MUDHEN201

The word quot. is not a word in the receipe. It is your computer's way of saying quotes, instead of actually showing them. The receipe calls for 3/4 cup lite coconut milk. For some reason, some computers - if you have it as an option to only show text and not html, it won't show quotes. So it is saying -- quot. lite quot. coconut milk, instead of showing the quotes. Does this help? Whenever you see the word - quot. - just know that it is actually the word -- quote -- and you need to only read the word between the words -- quot. -- .
