Meatball Sandwiches

Ingredients

  • 1 pound ground turkey
  • 1/3 cup finely chopped scallions
  • 1/4 cup dried bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon pepper
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup water
  • 2 garlic cloves, smashed
  • 1/4 teaspoon salt

Cooking Instructions

Heat oven to 400°F. Mix the turkey, scallions, bread crumbs, cheese, egg white and pepper. Form into 20 balls. Place on baking sheet; bake 15 minutes or until firm.

Remove meatballs to a large saucepan. Add remaining ingredients and simmer, stirring twice, 30 minutes or until sauce thickens.

Serve on rolls or over spaghetti.
