Mix all ingredients in large bowl.
Place mixture in loaf pan and cover with aluminum foil.
Bake in preheated 350 degree oven 40 minutes covered, 20 minutes uncovered.
Let rest 0 minutes before removing from pan and slicing.
This recipe satisfies nicely my sugar-free, flour-free eating habits. It freezes well for a single person or will feed a large family in one sitting.

08/31/08 09:15 AM | Alternate method from KarenI have not made this recipe but often make lowfat turkey meatloaf. the trick is to saute onions and shedded carrots and then combine with meat/breadcrumb, seasoning and egg (beaters) mixture. This will keep your meatloaf moist. |
