Ingredients

  • 2 pounds ground meat (beef, lamb, pork, veal, chicken, turkey or combo)
  • 2 eggs beaten
  • 2 bell peppers, diced (green, red, yellow, orange)
  • /4 cup one-carb ketchup
  • /2 cup oatmeal
  • onion chopped (optional)
  • salt/pepper/oregano/basil/thyme/rosemary to taste
  • seasonings/herbs/spices to taste

Cooking Instructions

Mix all ingredients in large bowl.

Place mixture in loaf pan and cover with aluminum foil.

Bake in preheated 350 degree oven 40 minutes covered, 20 minutes uncovered.

Let rest 0 minutes before removing from pan and slicing.

Recipe Notes

This recipe satisfies nicely my sugar-free, flour-free eating habits. It freezes well for a single person or will feed a large family in one sitting.

Alternate method from Karen

I have not made this recipe but often make lowfat turkey meatloaf. the trick is to saute onions and shedded carrots and then combine with meat/breadcrumb, seasoning and egg (beaters) mixture. This will keep your meatloaf moist.
