Combine rinsed peas tomatoes with juice and jalapeños into a large skillet. Simmer until peas are tender. Season with salt and pepper to taste. Water may be added if needed, and two cans of prepared hoppin' john (usually found in the canned veggie section of your grocery store) may be substituted for this part of the recipe.
Gently lower fish fillets into pea and tomato broth. Simmer until fish is flaky and cooked throughout.
In a separate skillet heat olive oil and garlic until garlic is lightly golden. Add spinach and saute until heated through. Season with salt and pepper to taste.
In a large bowl mound half of spinach and top with fish fillet. Surround with hoppin' john mixture, being sure to include plenty of broth. Drizzle fish with olive oil, a squeeze of lemon juice, and a sprinkle of creole seasoning.
