Microwave Mashed Potatoes & Gravy

Ingredients

  • 2 lb russet, Yukon gold or long white potatoes
  • 1 tsp salt or to taste
  • 1/2 cup 1% lowfat milk or fat-free half & half (or a mixture of the 2)
  • 1/4 cup fat-free or reduced-fat sour cream
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp freshly grated nutmeg (optional)

Cooking Instructions

Peel potatoes and cut in 1 1/2-in.-thick slices. Put in a large microwave-safe dish, cover with cold water, sprinkle with salt and toss to mix.

Cover and microwave on high 10 minutes (see Note). Stir gently, cover and microwave on high 15 minutes more or until potatoes are very tender. Drain in a colander; put in a large bowl.

Heat milk and/or fat-free half & half in a 2-cup glass measure in microwave on high until steaming hot (about 1 minute).

Meanwhile beat potatoes with electric mixer on low speed 1 minute or until most lumps are gone. Add sour cream and, with mixer still on low speed, gradually pour in hot milk in a slow, steady stream, adding more milk if necessary. Add pepper, salt and, if desired, grated nutmeg. Beat just until blended. Serve with the gravy.
