During Prep Time: Wash whole potatoes Place potatoes in Microwave Cook potatoes using baked potato feature. Once cooked take out and place in fridge until cold. Do not peel yet.
Also During prep time Boil the eggs and cool unpeeled eggs in fridge.
Dice 1/2 of the yellow onion and cut up the green onion. Cut up the Kosher dill spears Put off to side.
Cook Time: Peel cold potatoes and cut into bite size pieces. Peel eggs and also cut into bite size pieces but keep a few to grate.
Place all potato and egg pieces into large mixing bowl. Mix together gently. Take the other 1/2 of onion and the eggs saved and grate into mixture. Mix gently.
Add the Mayonnaise Relish and mustard. Mix all together and add more to taste. Sprinkle in garlic powder or minced garlic, Dill Spears, and add some of the pickle juice to taste. Mix. Once mixed add the white part of the green onion and mix. Top with the green part of the green onion.
If on hand you can also add balsamic vinaigrette dressing or Italian dressing to spice it up.
