Minestrone Soup for Slow Cooker

Ingredients

  • 2 1/2 cups package cole slaw mix
  • 1 large carrot, peeled & sliced
  • 1 zucchini, sliced 1/4 inch thick & halved
  • 1 yellow squash, sliced 1/4 inch thick & halved
  • 1 clove garlic, chopped
  • 28 oz can diced tomatoes, do not drain
  • 2 14.5 oz chicken broth
  • 1 15 oz can light red kidney beans, drained & rinsed
  • 2 slices prosciutto, chopped
  • 1 1/2 tsp dry italian herb seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • sprinkle red pepper flakes
  • 1/2 cup ditalini noodles

Cooking Instructions

In 5quart slow cooker combine all ingredients except noodles; stir to combine.

Cover slow cooker and cook on HIGH heat for 5 hours.

Stir in ditalini noodles. Replace cover and continue to cook for 30 minutes.

Spoon into bowls.
