Preheat oven to 350 deg. F
Line 12-cup muffin pan with baking cups: spray with cooking spray
Thaw and drain spinach, mix with remaining ingredients
Fill each cup three-quarters full
Cook for fifteen minutes or until a knife inserted comes out clean
Let cool 30 minutes
