Ingredients

  • 1/4 cup olive oil
  • 1 large onion, peeled and minced (about 1-1/2 cups)
  • 6 oz ground lamb (about 2/3 cup)
  • 2 cloves garlic, smashed and peeled
  • 1/2 cup couscous or slightly undercooked rice
  • 1/4 cup raisins
  • 2 tbsp dried mint
  • 2 tbsp fresh lemon juice
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • 1/4 tsp freshly ground black pepper

Cooking Instructions

1 Heat oil in a 2-quart souffle dish, uncovered, at 100% for 2 minutes. Add onions, lamb, and garlic. Cook, uncovered, at 100% for 5 minutes, stirring once.

2 Remove from oven. Pour off all but 1/4 cup drippings from dish. Place mixture in the workbowl of a food processor. Process until meat is finely chopped. Stir in remaining ingredients.
