Mother's German Potato Salad

Ingredients

  • 8 large potatoes
  • 1 lb bacon
  • 2 large green bell peppers
  • 4-5 whole dill pickles
  • 1 small sweet onion
  • 1/2 tsp salt
  • 1 tsp black pepper

Cooking Instructions

Peel and slice pototoes, cook until fork tender. Fry bacon until crispy, reserve grease.

Peel and slice onion, making \"rings\" Core and clean bell pepper and slice into rings. Slice dill pickles lengthwise

Preheat oven to 350 degrees. Coat bottom of 8x11 baking pan with cooking spray

Drain potatoes, layer in baking pan, top with bacon, onions,bell pepper and pickles, making a couple of layers. Pour bacon grease over top.

Bake for approximately 30 minutes until hot.
