Place an IRON skillet in a 350 degree oven. Cover the bottom lightly with vegetable oil. Beat egg seperately and add to cornmeal buttermilk and oil. Mix well. Carefully add to hot, oiled skillet allowing the mixture to sizzle in the oil. Place back into oven for approx. 35 mins or until golden brown. Once done remove to a plate, cut like a pie and allow to cool.
Great with any Southern meal or homemade soup
