Mushroom and Feta Cheese

Ingredients

  • 12 ounces sliced portabella  mushrooms or medium-size white mushrooms
  • 1 package (8 ounces) feta cheese with basil and tomato, crumbled or 8 ounces feta cheese,
  • crumbled plus
  • 1 teaspoon dried basil leaves
  • 4 ripe plum tomatoes, sliced
  • 1 cup thinly sliced red onion

Cooking Instructions

Cook mushrooms in a large nonstick skillet over medium-high heat 4 to 5 minutes until liquid released by mushrooms evaporates.

Scatter half the feta over partially baked crust. Top with mushrooms, tomatoes, onion and remaining cheese.

Bake 14 minutes or until crust is browned.
