Nectarines in White Zinfandel

Ingredients

  • 4 ripe nectarines, each cut in 12 wedges
  • 1/3 cup sugar
  • 2 cups white Zinfandel wine or nonalcoholic white Zinfandel
  • 1 pt pistachio ice cream

Cooking Instructions

Combine nectarines and sugar in a large bowl. Let stand 30 minutes for sugar to dissolve. Add Zinfandel; cover and refrigerate at least 4 hours.

Drain liquid into a medium saucepan. Cook over medium-high heat about 15 minutes until reduced and consistency of maple syrup. Refrigerate.

To serve: Spoon nectarines and syrup on individual serving dishes. Top with ice cream.

Planning Tip: Can be prepared through Step 2 up to 1 day ahead.
