Nepalese Curry Stewed Meat and/or Vege..

Ingredients

  • 2-3 lbs meat pieces chunked (chicken lamb)
  • 2 med onions chopped
  • 2 T hot (red) pepper seeds
  • 6 -10 cloves pressed garlic
  • 1 inch ginger root sliced or diced
  • 1 - 2 T salt
  • 1 t pepper
  • 4 t cumin seed
  • 1 t tumeric
  • (opt: potato chunks &/or other vegetable)

Cooking Instructions

In a deep pot heat some oil and add hot pepper seeds onions meat and brown the mixture. Add all spices at once except tumeric. Stir and mix well. Cook 1-2 minutes. Then add tumeric followed by 1/2 - 1 cup of water. Cook all until tender adding water as necessary. Cook about 30 to 45 mins.

Can also add vegetables such as potatoes cabbage peas eggplant zucchini or according to taste. Serve with raita achhar (Indian chutney) rice and/or Indian bread (or flour torillas) if you like

Recipe Notes

My friend was in the Peace Corps and served in Nepal for a few years following college. She used to cook up this dish, which is a tradtional and standard dinner in Nepal. When meat is scarce, it is used as a vegetarian or one pot meal.
