Bring a large pot of salted water to a boil. Add red potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop into 1 inch cubes. Place in a medium bowl.
Place eggs in a medium saucepan, and cover with cold water. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and dice.
In a small bowl, whisk together mayonnaise, milk, distilled white vinegar, green onions, salt and pepper. Pour the mixture over the potatoes, and mix together with the eggs and celery. Cover, and chill in the refrigerator approximately 2 hours before serving.

needs be betterThe southern attitude is --without mustard it is not potato salad.
potato salaf is always better with red potatoes---and please--do not peel them. The skins add color and taste.
marinates and other dressings are good but please find a new name when you do these different procedures---call it italian potato salad or ?????? |

caution!Make sure you never put mayonaisse on warm or hot food (potatoes in this case). I confess I once made my kid very ill before I knew this basic rule. And should wait till adding mayo and other ing before chopping eggs, which s/b chilled first. |

not apetizing enoughI like to color my salad a bit, so added some grated carrots, and finely diced red and green bell pepper. also a couple more eggs. added a bit of garlic and onion for more flavor also. |

RachaelI made this once and it wasn't bad, but it wasn't great either. So the next time I followed the recipe but did 3/4 cup celery, 1 cup mayo, 3/4 cup sour cream, no vinegar, instead used 1/4 cup of Italian dressing. I also did 6 eggs instead of 4. It tasted SO much better. |
