METHOD:
Preheat oven to 325°F. Cut the tips of the heads of garlic about 1/2 inch off so that the garlic is exposed. Drizzle with oil and season with salt and pepper. Roast until golden brown and very soft, approximately 45 minutes. Remove from oven and let cool. Once the garlic is cool enough to handle, squeeze the root end to release the garlic cloves. They should come out easily. Puree with butter, egg, bread crumbs, salt and pepper (to taste) and parsley. Roll butter into a log using saran wrap or parchment paper. Chill.
Season steaks with salt and pepper, and drizzle with oil. Grill steaks until they are three-fourths done. Place garlic crust on top of steaks and finish cooking. Let meat rest 5 minutes.

With a simple watercress salad with your favorite vinaigrette.
