No-Bake Peaches 'n Cream Pie

Ingredients

  • 2 3-ounce boxes peach or orange regular Jello
  • 2 baked pie shells
  • 2 cups boiling water
  • 1 quart vanilla ice cream, slightly softened
  • 2 pounds LARGE, FRESH, SOFT-RIPENED peaches
  • 2 cups fresh whipped cream sweetened to taste

Cooking Instructions

About an hour in advance, put the ice cream carton on your counter to partially soften. Prepare pie crusts and place one into pie pan. Add boiling water to Jello and stir until COMPLETELY dissolved. Immediately and quickly, add ice cream to the hot Jello in the pot by large spoonful and stir and break up ice cream completely (have patience; ice cream WILL dissolve). Place this mixture into refrigerator while preparing peaches. Peel and slice the peaches. Fold peaches into the Jello/ice cream mixture and pour into pie shell. Top off with top pie crust. Refrigerate at least 4 hours. Serve with fresh whipped cream.

Recipe Notes

NOTE: Can substitute peaches with frozen berry mixture (be sure to thaw completely and drain well!) or a little of each.
