Not So Baked Potato Salad

Ingredients

  • 15 Baby Red Potatoes
  • 2 Cups Chopped Celery
  • 1/2 Cup Chopped Onion
  • 1 Stick Butter/Margerine
  • 1/2 Tsp Salt OR Seasoned Salt
  • 1/2 Tsp Pepper
  • 1/4 Tsp Oregano
  • 2 Cups Diced Mozzerella Cheese
  • 2 Cups Diced Cheddar Cheese
  • 1 Cup Diced Ham
  • 3 Sprays Cooking Spray
  • 1 Cup Sour Cream (optional)

Cooking Instructions

Preheat oven to 375 degrees. Rinse Baby Red Potatoes and dice them (peeled or unpeeled) into sections according to your preference, placing them into a large plastic bowl.

Melt whole stick of butter/margerine and drizzle over potatoes. Add salt, pepper and oregano, mix so that all potatoes are coated and seasoned.

Coat bottom of cookie sheet with cooking spray and spread the potatoes over it in a single layer evenly. Bake for 10 minutes.

Chop celery, onion, ham and cheese if need be during cook time.

Remove potatoes from the oven, allowing them to cool for about 10 minutes. After they have cooled, combine ALL ingredients in large serving bowl or tray. Garnish with sour cream. Served hot or cold!

Recipe Notes

Makes a great side dish for dinner or buffet, try using it at a potluck! Made this from scratch, no recipe reference. A friend of mine dislikes actual potato salad and I whipped this up in no time at all!
