Oatmeal Quinoa Muffins

Ingredients

  • 1/4 cup Dry Quinoa
  • 1/4 cup Sugar (or sugar substitute, such as Splenda)
  • 1 3/4 cups Dry Quick Oats
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 1 cup Milk (1%, 2%, soy -- your pick!)
  • 1 teaspoon Vanilla Extract
  • 2 Eggs
  • 1 medium Apple, peeled and chopped (or a handful of other fruit)
  • 1/2 cup Pumpkin puree

Cooking Instructions

Preheat oven to 325F .

Combine dry ingredients in one bowl and wet ingredients in another bowl.

Combine dry and wet ingredients together. Mix well.

Grease a "6-large-muffin" tin with butter or cooking spray. Pour batter into the slots and bake for about 30 minutes, or until a toothpick comes out clean.

Serve warm or cool the muffins on a rack if you'd like to freeze them for the future.

Recipe Notes

This is an easy muffin recipe that's really healthful and filling. If you freeze them, it's a great grab-and-go breakfast for busy mornings.
