
Heat oven to 350°F. Have baking sheet(s) ready.
Put butter, both sugars, cinnamon, eggs, vanilla, baking soda and salt in a large bowl. Beat with mixer, starting on low speed and increasing to high, until well blended. Reduce speed to low; beat in flour just until blended. Stir in oats, chocolate and pecans.
Drop rounded tablespoons about 1 in. apart on ungreased baking sheet(s). Bake one sheet at a time, 10 to 12 minutes, or until cookies are golden brown. Cool 1 minute on baking sheet, then remove to a wire rack to cool.
How long will they keep? Room temperature, 1 week; freezer, 2 months.
Softening Butter The best way to soften butter so it can be beaten easily is to cut it up and leave at room temperature for 15 or 20 minutes, depending on how warm the room is. Butter is soft enough when it yields to gentle pressure from your fingertips. Butter can also be softened in a microwave, but be extremely careful it doesn’t melt.
