Chop bacon into pieces and saute with onion until onion is translucent and bacon is cooked. Do not over cook. Remove bacon and drain. In separate pan, place green beans and broth and bring to a boil. Cover and cook for 3 -4 minutes, or until crisp tender. Drain and return to pan. Toss with bacon and onion and 1 T of the bacon fat. Season with salt and pepper before serving.
My mom made this recipe when I was a kid, but used canned green beans and boiled the bacon and onion in the liquid the beans came in. I prefer my version and the crispness of fresh green beans, but I still have a smile on my face when I remember hers!
