Prepare rice according to package directions and cool. Chop veges artichoke hearts and onions and add to rice. Mix curry powder with mayonaise and toss with rice. Add cubed ham or chicken. Refrigerate for at least hour for flavors to blend.
A nice alternative to pasta and potato salads! Feel free to add chopped green peppers and substitute low fat mayonaise to this recipe. Even without the ham or meat, its a great side dish!
