Prepare one pie crust (for top of pie only). Preheat oven to 350 degrees. Peel, core, slice the apples 1/4 inch thick. In a saute pan, on medium heat, melt the butter. Stir in the brown sugar and stir for one minute then add th apples and cinnamon and saute for 3 minutes, stirring. Remove from heat and pour into a deep-dish 9-inch pie pan. Cut out a 1-inch circle in the center of the pie crust and place crust on top of apple mixture. Flute the edges of the crust. Place into oven and bake for 15 minutes. In a mixing bowl, hisk the remaining 1/4 cup of sugar, the egg yolks, heavy cream and vanilla. When pie has been cooked for 15 minutes, pour this custard through the hole in the pie crust. Place pie back into the oven and contue to bake for 30 minutes until custard is set. Remove from oven and cool completely. Spoon onto serving plates, garnish with whipped cream and serve.
