Preheat an oven to 400F.
Coat the onions with olive oil, and season with salt and pepper. Place in a roasting pan or cast-iron skillet, cut side down, and roast for 20 minutes. Turn the onions over, and continue roasting until well caramelized.
Beat the olive oil, vinegar, lemon juice, and mustard together, and pour over the onions at service.
