Orange-Ginger Shrimp Kebabs

Ingredients

  • 1/2 cup orange juice (about 2 oranges)
  • 2 tbsp fresh chopped green onion, minced
  • 1 tbsp fresh ginger root, minced, peeled
  • 1 tbsp fresh cilantro, minced
  • 2 tbsp rice vinegar
  • 2 tbsp low sodium soy sauce
  • 1 tbsp vegetable oil
  • 2 tsp grated orange peel
  • 1 Chile Peppers, red, hot, fresh, minced
  • 1 lb large shrimp, peeled and deveined
  • 2 Oranges, medium, fresh, peeled, cut in half and quartered
  • Cooking spray

Cooking Instructions

Whisk together orange juice, green onion, ginger, cilantro, vinegar, soy sauce, oil, orange rind, and chile in a bowl.

Mix in shrimp and coat well.

Wrap with plastic wrap and chill 15 minutes.

Take shrimp out of marinade and save liquid.

Thread shrimp and orange quarters onto each of 8 skewers.

Preheat a large cooking spray coated grill pan or grill.

Grill shrimp 4 minutes per side, coating with saved marinade occasionally.
